I’m all for quick bites, and it’s a bonus when you can make them a little healthy too. This recipe gives you that extra crunch you need to keep your afternoon going, while also keeping all of your fall vibes in full gear. Now enough chit chat, let’s get to the recipe!
Ingredients:
- 1 1/2 cup old fashioned oats
- 3/4 cup crispy rice cereal
- 1/3 cup flax seed
- 2 tbsp chia seeds
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 cup almond butter
- 1/2 cup pure pumpkin
- 1/4 cup honey
- 1 1/2 tsp vanilla
- 1/2 cup mini chocolate chips
Directions:
- In a large mixing bowl, whisk together the oats, cereal, flax seed, chia seeds, cinnamon, and nutmeg.
- Add the almond butter, pumpkin, honey and vanilla, then fold in the chocolate chips. Just like with my Protein Ball recipe, feel free to get your hands a little dirty to help mix the ingredients better, or just use a firm spatula.
- Roll into small balls about the size of 2 tablespoons, and store in an air tight container in the refrigerator. They should stay fresh for about a week!
