Christmas Cupcakes

What do you do when it’s too cold to go outside and play? We decided to bake some Christmas cupcakes! We used what we had stored in the pantry already and it made for a great afternoon of baking. Carter loved shaking the sprinkles on them to decorate! Find the recipe below for a sweet treat.

Ingredients:

  • 1 box white cake mix
  • 3 large egg whites
  • 1/3 cup oil
  • 1 tsp vanilla
  • 1/2 cup mini chocolate chips
  • 1/2 cup holiday sprinkles (plus more for the toppings)
  • Frosting:
  • 2 cups powdered sugar
  • 1/2 cup butter softened
  • 1 tsp vanilla
  • 2 tbsp milk

Directions:

  1. Preheat the oven to 350 degrees.
  2. Combine the cake mix, egg whites, oil, and vanilla. Mix well.
  3. Fold in the chocolate chips and holiday sprinkles.
  4. Pour into cupcake pans with or without liners. Just make sure you spray the pan first!
  5. Bake for 20 minutes. Make your frosting while they bake!
  6. Wait for the cupcakes to completely cool before removing them from the pans and frosting them. You don’t want the frosting melting off!
  7. Frost and decorate away, and then enjoy. Feel free to save some of the extra sprinkles for “Reindeer Food” like Carter did too!

About Alyssa Janis

Hi Everyone! Welcome to my lifestyle blog! Thank you so much for coming to my site to learn a little more about me and our family. I am 28 years old, (oh my goodness almost 30...), and have been married to my amazing husband, Jeff, for four years. I am also a mom! Carter James is our adorable, little blondie who is two, and Payton Jeanne is our newest baby girl who was born this past July. Bella is our yellow lab, and Chuckles is our cat. Of course I had to mention the fur babies because I'm sure they will come up in this blog at some point. I've been wanting to start a blog for quite some time now, and I think God finally gave me the courage to do it. I have always enjoyed writing, and while this is new to me, I'd love to share a little more about my life with you. My hope is for you to read this blog and feel like you're having normal conversation with me, so feel free to ask questions and make comments! I look forward to sharing our former NFL family life, mommy tips, recipes, favorite bible verses, and more. Looking forward to sharing the next play with you!
