Every now and then I like to cook with the fancy cheese and I swear it never disappoints! This recipe will make you feel like a real chef and tastes amazing. From years of trying new recipes, I learned that I really like mixing sweet and savory flavors together. This recipe has that taste to me!
Ingredients:
Mango Relish
- 2 tbsp white vinegar
- 3/4 cup pure cane sugar
- 1/2 cup light brown sugar
- 3 cups mango, peeled and diced
- 2 tbsp minced garlic
- 2 tsp crushed red pepper flakes
- 1 tsp garlic powder
Chicken and Brie Quesadillas
- 1/4 cup avocado oil
- 4 flour tortilla shells (may substitute for gluten free shells)
- 3/4 cup mango relish (recipe above)
- 8 oz brie cheese, paper removed and cut into strips
- 2 cups fully cooked shredded chicken breast
- Plain Greek yogurt, chopped cilantro, and chopped green onions for garnishes
Directions:
Mango Relish
- In a medium saucepan, combine the vinegar and sugars. Once the mixture is boiling, turn the heat down to a simmer.
- Add the mango, minced garlic, crushed red pepper flakes, and garlic powder. Continue to simmer for about 20 minutes or until it is thick. Stir occasionally.
- If you don’t use all of your relish, feel free to store it in an airtight container inside your refrigerator!
Chicken and Brie Quesadillas
- Preheat a griddle pan, or I’ve used a large non-stick skillet. Add some of the avocado oil over medium heat and let the pan heat up.
- Spread the mango relish on one tortilla shell and place, dry side down, on the hot pan. Top with shredded chicken and a few slices of brie cheese. Place another tortilla shell on top and press down. Flip the quesadilla carefully when the bottom is light brown, and cook for 3-4 minutes on the opposite side.
- Cut into triangles and garnish with Greek yogurt, chopped cilantro, and chopped green onions.
