Sourdough Discard Pumpkin Muffins

You are going to love these muffins! The recipe is easy to follow, and I am always excited when the kids like my recipes too ;). Check out the recipe below, and message me if you give it a try!

Ingredients

  • 2 cups unbleached all-purpose flour – click flour and you’ll find my favorite one linked!
  • 2 tsp cinnamon
  • 1 1/2 tsp pumpkin pie spice
  • 1 tsp clove
  • 1/4 tsp nutmeg
  • 1 1/4 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup avocado oil
  • 1/2 cup light brown sugar
  • 1/4 cup cane sugar
  • 3 large eggs
  • 3 tsp vanilla extract
  • 1/3 cup sourdough discard
  • 1 15oz can organic pumpkin

Crumble Topping Ingredients (optional):

  • 1/3 cup unbleached all-purpose flour
  • 1/2 cup light brown sugar
  • 1/2 cup cane sugar
  • 2 tsp cinnamon
  • 1/4 tsp clove
  • 1/4 cup melted grass-fed butter

Let’s get baking!

Directions:

I like to use a spatula instead of my stand mixer so I don’t over mix the batter for this recipe!

    1. Preheat your oven to 350 degrees and line your muffin tin with muffin liners.
    2. In a large mixing bowl, whisk together your sugar, oil, eggs, and vanilla.
    3. Next add your sourdough discard and pumpkin! Keep mixing together slowly.
    4. Time to add your spices (cinnamon, pumpkin pie spice, clove, nutmeg), along with your baking powder and soda. Next, add your salt and flour. Stir slowly with your spatula so you don’t over-mix the batter! Set large bowl aside.
    5. In a medium bowl, mix together your crumble topping! Flour, sugars, cinnamon, clove, and melted butter. I like to use a mini whisk or even a fork!
    6. Back to the muffin batter! It will feel pretty thick, that’s a good thing. Start filling your muffin liners in the tin next, about 2/3 full. Then sprinkle each cup with some crumble over the top.
    7. Bake in your oven for 22-25 minutes, or until your toothpick comes clean! You know your oven best :).
    8. I like to pull the muffins out of the muffin tin and let them cool on a wire rack! They are so delicious to eat warm.. but let them cool off and settle for about 15 minutes first before eating! They will be even better! 🙂
    9. ENJOY! 🙂 Store any extras in an airtight container! Don’t leave them unattended on your counter for your dog to eat.. not that I know from experience…
